Tortilla Soup

This isn't technically house related, but it's so good I wanted somewhere to share it. I concocted a great recipe for tortilla soup, and we've been eating it almost every day. It's so easy, it tastes really good, and it's not that bad for you. So here:

Tortilla Soup
6-8 cups of chicken broth
2 14-oz cans of diced tomatoes
Half a bag of frozen corn
1.5-2 14-oz cans of black beans
1-2 fistfuls of rice (probably about 3/4 cup)
Red pepper flakes or cayenne pepper to taste
Optional: cubed chicken breast pieces

Instructions: dump all ingredients in large pot. Bring to a rolling boil, let simmer for a few minutes (to make sure it gets all mixed up). Boil longer if you added chicken. Serve with 1-2 ounces of cheddar or colby jack cheese melted in.
